Increasing winter temperatures affected revenue at family ski destination Mountain Creek Resort, making it more urgent to revitalize its stalling food and beverage offerings. After a thorough audit we hired a new F&B director, overhauled inventory management, and optimized labor scheduling. We also helped the culinary team simplify their menu, increasing guest utilisation and greatly improving quality. Through focused and carefully chosen adjustments August Point helped fortify Mountain Creek Resort against the downturn in the sector.
What began in 2016 aiming to celebrate the culinary culture of the African American diaspora became a trying project for its directors. August Point was engaged in 2019 to implement our Integrated Development Management process to right size the project budget, correct the missteps to date, and shepherd the project through to launch.
Bringing our network to bear, we took over construction administration, replaced a defrauding contractor, revamped recipes and menus to streamline production, and overhauled FF&E procurement to bring capital expenditures under control. We sourced and hired an experienced General Manager and in collaboration with them, are producing and implementing the necessary operational systems to ensure a successful opening under the most trying conditions of a global pandemic.
The Peninsula is a complete transformation of the former Spofford Juvenile Detention Center in the Hunts Point neighborhood into a mixed-use campus with 750 units of affordable housing as well as offices, retail, and manufacturing space. August Point’s consultants are working with the core development team to identify and recruit outstanding tenants for Building 1A, which will feature 34,000 square feet of food and beverage production space, retail frontage, and media production space. We look forward to collaborating with The Peninsula’s team over the coming year to build a vibrant new food and beverage manufacturing community in Hunts Point.
August Point’s consultants worked with the acclaimed Hudson Valley store Talbott & Arding Cheese and Provisions throughout 2020 to develop a comprehensive business plan for a retail expansion in 2021. The business plan tells the story of Talbott & Arding and its founders, identifies upcoming opportunities, articulates potential risks, and ultimately supported the company in securing investment capital for its expansion. The team continued to work with the owners to adjust projections, timelines, and operational strategies to account for the radically altered food business landscape caused by the COVID pandemic. Our recruiting practice is now working with Talbott & Arding to identify and hire four key management positions in anticipation of opening their new 8000-square-foot location in 2021.
Martina Rossi Kenworthy, co-founder of Gustiamo Foods and co-chair of the Slow Food NYC board of directors, has developed a prepared artisanal pizza that is on par with the best made-to-order pies available. August Point has advised the venture since inception, providing business and financial planning guidance along with support of the product's iterative refinement from concept to execution. Slated for a 2020 launch, La Rossi Pizza will deliver sought-after quality in the pizza CPG space.
